The decision was easy.

Claire Clark, MBE, MOGB, founded Pretty Sweet in 2014 with Sarah Crouchman. Between them they have worked at some of the finest restaurants in the world and have earned some of the industry’s highest honours. Claire was awarded the MBE in 2011 for her contribution to the craft, and was the first person in the UK – and the only female recipient – of the Meilleur Ouvrier de la Grande-Bretagne, France’s most prestigious professional award.

With eight full-time and seven part-time staff, Pretty Sweet supplies cakes and pastries to a range of clients including Harrods and the five-star The Berkeley and The Royal Horseguards hotels. The company specialises in fine, detailed work combining sophisticated tastes and creative design.

When it came to choosing equipment, Claire knew exactly what was needed. “In most of the kitchens I’ve worked in previously, there’s been a RATIONAL. Knowing what they could do, the decision was easy.”

The RATIONAL Solution.

Pretty Sweet has two RATIONAL SelfCooking Center® 201 units. These are large cabinet versions capable of holding up to 20 1/1GN containers simultaneously, with the same advanced functionality and control offered by the standard models. “We’re making up to 8,000 of our most popular products a day, so having the ability to cook large amounts at once is vital,” explains Claire. “Not having to cook everything in small batches saves our staff time and energy consumption.”

Aside from sheer capacity, it’s the level of control the SelfCooking Center® provides that has impressed Claire.

Accessed via a simple to use touchscreen interface, every stage of the cooking process can be adjusted and controlled, and then saved as custom programs for future use. “Being able to put in trays croissants at different times, and knowing that they’ll come out perfectly each time is fantastic.”

Other time-saving features include the Efficient CareControl self-cleaning system. This allows the SelfCooking Center® to automatically clean and descale itself, calculating the quantities of cleaning agents required depending on the level of cleaning.
