Bertie’s banqueting rooms at in the city of Elland in Yorkshire are amongst the largest and most prestigious catering companies in the region. The restaurant headquarters are located in an elegant Georgian sandstone building. The main ballroom has a capacity of 250, and two additional ballrooms seat 100 guests each. When the time came to design a new kitchen in the recent modernisation, Managing Director and Chef Jonathan Nichols looked for equipment that could prepare food in large quantities quickly and reliably.
The VarioCookingCenter® was very high on his wishlist as a modern multifunctional appliance. “My head chef and I had seen it in action before at a live demonstration of the VarioCookingCenter®,” explains Jon. “We were both impressed by what the appliance could do.” The 112L has two pans with a capacity of 25 litres each, ideal for use in a small space, but where food must be produced in large quantities.
Like the other VarioCookingCenter® models, flexibility and control are crucial for the design of the 112L. It can replace baking trays, boiling pans, pressure cooking braising pans, large pots and deep-fat fryers. A user-friendly touchscreen offers precise control of every single phase of the cooking process, while VarioCookingControl® automatically monitors the cooking process and makes the necessary adjustments and only informs the user when they need to take action.

“We are blown away by how good the appliance is,” says Jon. “When you are catering for a large number of people and know precisely that you can be sure that the food will be exactly the way you planned it, that is a great help.” That is one less thing you have to think about.” We also save time. “We can start more quickly as the system heats up so quickly,” says Jon. “And once the food is ready, you don’t need to clean any pans, just rinse and you can get on with the next dish.” Thanks to the patented VarioBoost heating system, the 112L can reach a temperature of 200 °C in less than 150 seconds and can quickly be brought back to temperature, even if loaded with cold food. Cooking times are four times shorter compared to conventional appliances, with energy savings of up to 40%. Jon is very satisfied with the new addition to the kitchen at Bertie’s. “At the end of the day it saves us time and money. It speeds us up at every step!”
