For Claire Clark, MBE, co-founder of Pretty Sweet, patisserie is a science. “In everything you do, you have to proceed with the highest precision. Every step of the work process must be executed exactly the same every time, from weighing the ingredients to the oven temperature and baking time. It is crucial to control all these factors in order to achieve perfect results every time.”

Claire founded Pretty Sweet in 2014 together with Sarah Crouchman. Both have worked for some of the best top restaurants of the world and have received some of the highest awards of the industry. In 2011, Claire received the MBE for her contribution to the craft, and she was the first person in the United Kingdom and only female recipient of the “Meilleur Ouvrier de la Grande-Bretagne", the highest professional award given in France.

With eight full-time and seven part-time employees, Pretty Sweet supplies cakes and pastries to a range of customers, including Harrods and the 5 star hotels The Berkeley and The Royal Horseguards. The company specialises in fine detailed work, which combines refined flavours and creative design. Pretty Sweet works with one VarioCookingCenter® 211, which has one pan with a 100-litre capacity and a footprint of 1,164 mm (W) x 914 mm (D) x 1,100 mm (H). “Such an appliance is something unusual in a patisserie,” says Claire. “But there are also not many with our production output!”

Pretty Sweet can produce up to 8,000 of its most popular products, and so it is crucial to be able to produce large quantities. “For example, we can produce a whole load of lemon cream at once,” explains Claire. “And with the automatic control system, we can simply leave it boiling and take care of other tasks, and still be sure that the result will look exactly as we imagine, without any sticking or burning.”

The modern VarioCookingControl® system from RATIONAL is user-friendly and powerful, it offers options that can be selected on a touchscreen user interface. It continually monitors the dish and is able to make temperature adjustments to guarantee perfect results.
