The Hilton Birmingham Metropole, a 790 bedroom hotel, with more than 30 function and conference rooms. The 70 chefs at the Hilton Birmingham Metropole must be amongst the busiest in the UK, preparing international buffet style dining in the Boulevard restaurant, a la carte meals in Millers restaurant whilst supporting the 24-hour Lounge Bar.
Recently Executive Chef Paul Taylor replaced a number of ageing appliances with five of the RATIONAL SelfCookingCenter® for the banqueting kitchen, 2 for the pastry kitchen, 1 for the breakfast area and 1 in the lounge area kitchen.

Catering for two a la carte restaurants on top of banquets for up to 2,000 guests, the equipment in the kitchen must be efficient, reliable and capable of producing a wide variety of meals. Breakfast is a case in point. The SelfCookingCenter® has a feature called iLevelControl. This allows different products to be cooked easily at the same time.
Paul comments: “You can have different products on different shelves, and the SelfCookingCenter® will tell you when each one is ready. We can do a full cooked breakfast in one SelfCookingCenter®.” Paul adds that the range of accessories that RATIONAL offers makes a big impact. The MultiBaker tray when used with the ‘Fry Eggs’ automatic cooking process, means the chefs can easily cook 160 fried eggs in just 90 seconds.
