Latimer’s is based on the old-style fish shop values of the catch coming straight from the boat to the counter. A relatively new business that has been trading for the past 12 years, it’s seafood counter has over 100 different varieties of local sustainable fish and shellfish as well as the old favourites like cod, haddock & salmon. Recently Ailsa & Robert Latimer decided to expand their business and open a cafe on the same site.

“We wanted to do more than just sell wet fish and our ready to eat range. Alongside our fantastic fresh fish, we wanted to offer our customers other cafe essentials like cooked fish, bacon rolls and homemade cakes & scones. We knew we needed the right equipment so after attending the RATIONAL CookingLive demonstation it was clear the RATIONAL would do everything we wanted. We were bowled over by it – its an awesome bit of kit.” Says Ailsa Latimer.

“We bake homemade scones and pastries, frozen bake-off items, toast teacakes, grill bacon and cook chips as well as our speciality smoked haddock & leek pastries. Its brilliant! We put everything together and there’s no taste transfer.” Says Ailsa. Ailsa & Robert are now able to offer their customers a healthier option of the Latimer’s favourite, fish & chips. “We cook the “naked” fish without batter and it comes out tender and moist with a delicate flavour – just beautiful” says Ailsa.
