Chef Duangporn Songivsava (Bo) and Dylan Jones (Lan), have always had a passion and desire to create exceptional traditional Thai food. Bo.lan was born in early 2009. Since opening Bo.lan, they have constantly been campaigning to raise awareness of important issues regarding Thai food and food security. Bo.lan advocates the use of bio diversified produce and this is reflected in the ever-changing menu. “We work closely with small scale Thai farmers and around 80-90% of our menu is organic”, explains Chef Dylan and Chef Bo.
“Bo.lan balance is the chef’s interpretation of Thai food by applying the inspiration from different discoveries throughout our contemporary journey, ancient cookbooks and tasty conversations with farmers, artisan producers, fishermen, foraging couples and food related professionals. The menu will also take you through the culinary culture of Thailand experiencing communal norms through the pleasure of Thai food”, says Chef Dylan and Chef Bo.
