“Our menu showcases natural, hyperlocal organic cuisine using the best quality, seasonal ingredients cooked with flair and imagination,“ says Simon. Sustainability is a guiding principle at L’Enclume and all Simon’s restaurants. This led to the creation of Our Farm, which supplies ingredients to L’Enclume, Rogan & Co, Henrock, Aulis Cartmel and Aulis London.
“Our vision was to provide the perfect raw materials and build the link between food and nature,“ Simon explains. Operating a closed loop system, food waste is composted and recycled back into the farm’s soil.
To maintain high standards, Simon uses Rational’s iVario Pro and iCombi Pro cooking systems at all his restaurants. With a diverse tasting menu and up to ninety covers a day, traditional appliances couldn't keep up. “Our old appliances were inferior, with constant, expensive repair costs,“ he says.
