Hygiene Management Pro is a professional software solution for hygiene and quality management and the paid extension of the hygiene management functions already available on the ConnectedCooking platform.

Hygiene Management Pro is for companies that want to digitise their hygiene and quality processes making them simpler, more transparent and safer. In particular, companies with several locations, which are organised in a chain structure, benefit from the software solution.

Hygiene Management Pro supports many processes along the food journey. Among other things, the software is used for quality assurance in incoming goods inspection, in refrigeration appliance monitoring, food production, food service and cleaning.

ConnectedCooking enables free digital access to RATIONAL cooking systems and services. This also includes the hygiene management module, in which the temperature curves from the RATIONAL cooking systems are recorded. Based on ConnectedCooking, Hygiene Management Pro offers an extended range of functions with corresponding measurement technology. RATIONAL also offers consulting and training services, supports you in identifying requirements, with the system setup and offers interactive training courses to accompany the digital transformation.

Many kitchen software providers only offer individual solutions. Hygiene Management Pro, on the other hand, comprises a complete solution consisting of software, measurement technology and services. The solution connects different culinary areas with each other and can integrate the devices of selected manufacturers. RATIONAL is also a global market and technology leader and, in addition to almost 50 years of experience in the field of professional food preparation, has over 20 years of experience with digital solutions. Hygiene Management Pro is sold as a SaaS (Software as a Service) model and is not available for on-premises installation.

SaaS is the abbreviation for “Software as a Service” and describes a sales model in which the software is provided via the Internet in a cloud and is accessed via a web browser. This means that it does not have to be installed locally. The provider undertakes the maintenance and care of the software. Hygiene Management Pro is used as a service over the Internet. The user pays monthly for the use of the software. On-premises also describes a software licensing model. In contrast to the SaaS model, the user acquires the software once and operates it on their own hardware under their own responsibility.

Software as a Service solutions provide more flexibility, security and performance.

The software is always up-to-date in order to optimally support business processes. There is no need to set up an IT infrastructure and install the software locally. This eliminates the need for expensive acquisition and operating costs for your own computers as well as maintenance and upkeep costs for hardware and software.

Technical requirements.

No, you don't need to install software on the computer. Hygiene Management Pro is a cloud software and is used directly in the web browser. For Apple and Android devices, the “Hygiene Management Pro” app is downloaded from the respective app stores.

A LAN, WiFi connection or mobile Internet with at least 16,000 kbit/s download and 1,024 kbit/s upload. Also an Internet browser (Chrome 87 or higher, Microsoft Edge 87 or higher, Safari 14 or higher).

Hygiene Management Pro can be used on any device such as a smartphone, tablet, laptop or desktop PC. The mobile application is available for Android and iOS devices.

Data protection and data security.

Data protection is very important to RATIONAL. All data is therefore protected in accordance with the GDPR and every employee is regularly trained in this regard. In addition, a state-of-the-art data security concept offers the highest possible protection of data.

All connections and communication are TLS encrypted. All data is stored redundantly and is therefore protected against data loss. The data centres are physically and virtually secured. Hygiene Management Pro is automatically secured on a daily basis.

The data is stored and processed in an ISO 27001-certified data centre in Frankfurt am Main, Germany.

The data is provided in a CSV data format.

Access remains active even after cancellation, whereby only you can view your data. Once notified, we will deactivate the access and delete all data.

Software.

Yes, you can set the user interface in different languages. There is also the option of translating checklists into any language.

The web application is only available online. Checklists can also be edited offline in the mobile app after opening. When the Internet connection is restored, the data is synchronised. If a sensor goes offline, it will store the temperature data for 10 days. The temperature data is automatically synchronised when the Internet connection is restored.

Hygiene Management Pro offers integration options for selected ERP systems.

In principle, different devices can be integrated if they meet the basic technical requirements. It is therefore recommended to check these basic requirements when planning new kitchens. For existing devices, such a test can be carried out retrospectively. RATIONAL digitalisation specialists are available to answer any questions you may have.

The HACCP temperature data of RATIONAL cooking systems is stored for 6 months, all other data for 5 years.

The data will be stored for 5 years. This period is based on Regulation EC No 178/2002 in conjunction with the Implementing Regulation of 15 October 2018.

The collected data will be deleted after 5 years. If desired, this data can also be exported and transferred.

No, the memory is expanded as required. The system automatically expands resources if needed.

Yes, checklists can be created and edited on the computer via the web application. Checkpoints can be changed, added or deleted. Checklists are completed exclusively via the mobile app. This prevents unauthorised persons from having access to the lists and increases tampering protection.

Checklists can only be deleted via the web application in the administration area. Data already recorded via checklists is retained.

It is not possible to delete checklists from the system in the mobile app. However, you have the option of adding individual comments to the checklists. This ensures seamless documentation and increased audit compliance.

Measurement and networking technology.

The sensors are equipped with the latest LoRaWAN radio technology. With a radio frequency of 868 MHz, they offer ideal conditions for wireless data transmission over long distances and inside buildings.

LoRaWAN stands for “Long Range Wide Area Network”.

LoRaWAN is a radio technology that enables low-radiation, energy-efficient transmission of data over long distances. The technology has been specially developed for the Internet of Things (IOT).

Yes, it is waterproof and has an IP65 rating.

Yes, the sensors are water-resistant and have protection class IP67.

LoRaWAN modules can reach a range of 2 km in free field conditions. These values are laboratory values and the actual range depends on the building structure and other sources of interference such as solid walls or metal environments. In any case, have a RATIONAL digitalisation specialist advise you on site and check the actual range.

When opening the sensor housing, the high protection requirements (IP67) can no longer be guaranteed, so the housing must remain tightly sealed. Due to the long battery life of up to 10 years, no battery replacement is necessary.

The sensors can withstand temperatures of up to 85 °C for a short period of time, whereby continuous use should be in the temperature range up to 70 °C.
In the negative temperature range, the sensor can be operated at up to -40 °C. Extreme temperatures, both positive and negative, affect battery life. We therefore recommend use in the temperature range from -25 °C to + 45°C.

The radio frequency of the sensors is set to 868 MHz in Europe.
