Biryani By Kilo, which kick-started as a single delivery-only kitchen in 2015 in Gurugram, near Delhi, India, is now seeing its aromas lingering across the length and breadth of the country with a strong network of 60 outlets spread across 26 cities. The secret recipe to the brand’s monumental success, in the words of Mr. Kaushik Roy, Founder & CEO, remains the concept – bringing the age-old royal biryani experience right at the doorstep of the guest’s residence.
After spending nearly 25 years in the corporate F&B space, Mr. Roy decided to throw his hat in the ring to revolutionize how biryani was served. In 2015, the traditional dish biryani as a concept was highly unorganized. It was majorly seen being prepared in bulk and served loose in plastic containers. Convinced with the traditional dum-cooked biryani in earthen pots, Mr. Roy resurrected the forgotten Biryani experience with Biryani by Kilo.
At that time, ‘cloud kitchen’ as a concept was non-existent in India; foodservice aggregators were just testing their delivery model across the country. Making everything from scratch, Biryani By Kilo created an in-house built food ordering app and also had its own delivery fleet. Today, apart from the cloud kitchens, the brand has at least one dine-in outlet in each of the cities where they operate to showcase their royal dine-in experience. Backed by investors, the brand is poised to go international.
