Biryani By Kilo initially believed in maintaining the traditional essence throughout. Traditional cooking equipment were hence installed. But, as the brand tasted success, to scale per the demand, technological assistance in the kitchens had to be plugged in. The brand made a move to install RATIONAL iCombi Pro which took over the traditional equipment.
Safety of the kitchen staff had been one of the key operational concerns for the brand given that the traditional earthen oven and use of charcoal rose the kitchen temperatures exorbitantly and also exposed the staff to smoke emitted as process of cooking in this traditional set up. With the installation of RATIONAL cooking systems, that box was ticked. This move not only guaranteed their safety but also increased the kitchen staff’s performance at work.
