“The iVario Pro is a true all-rounder,“ says Simona Saputo, Key Account Manager at RATIONAL. "In commercial kitchens, it replaces tilting pans, boilers and pressure cookers; in restaurants, it replaces stoves, pots, pans, deep-fat fryers and bain-marie." If flexibility is important - for example in à la carte – Simona recommends a model with two pans. In the iVario Pro 2-S and 2-XS, for example, pasta can be cooked on one side and steaks can be fried on the other at the same time. If even more food needs to be prepared at once, the pans can be divided into a total of up to four zones with separate temperature management.
