Across Kitopi’s operations, roughly 80% of the food we serve passes through a RATIONAL iCombi Pro unit at some stage - whether during prep or cooking. The scale is massive.
For proteins, the team works with high temperature grill settings, often around 250 - 260°C. The process is so simple: place the product into the combi-oven, select the brand icon, press start - the iCombi Pro does the rest. We use RATIONAL grill accessories to achieve even better results and ensure instant sear and minimal heat loss.
Central kitchens work around the clock, while satellite kitchens operate for breakfast, lunch, and dinner. With this volume, consistency and speed are essential. We separate prep and cooking RATIONAL units to keep them operating efficiently. In the morning, we do the vegetables, roasted potatoes, rice, beetroots, asparagus, and more. After 10 a.m., we begin service.
