The hospital in Kristianstad has 330 beds. They have 33 employees in the kitchen. They serve around 220 breakfasts, 600 lunches and 280 dinners per day. The hospital opened in 1973. At a hospital, it is important to cater to patients' allergies and dietary requirements, which is also a challenge. They monitor wastage closely and continuously try to reduce it. The kitchen is large and, therefore, good planning and structure is required in order to be able to deliver all meals. Among other things, they work with a conveyor belt in order to portion pack the food. Their goal is to provide all guests and patients with a positive mealtime experience in every way.
"With RATIONAL ovens, time has been freed up for other things. It means that we can use the afternoons for e.g. baking, or to prepare the next day's meals. Since we began to use RATIONAL, we have been able to make more food from scratch and avoid intermediate products more and more", says Margareta Jakobsson, Head of Unit, AO Måltider in Kristianstad. ”We make cabbage pudding, fried pork with onion sauce. The savoury pancake with diced pork is prepared excellently using RATIONAL ovens", continues Margareta, and she also emphasises the weight of the support and training that RATIONAL provides to all of its users. They are very proud of being able to serve their own Baltic herring, which they crumb and prepare the day before, and then warm up in the ovens the next day. Both guests and patients praise the food and have noticed the difference when the meals are prepared from scratch. They have been using RATIONAL ovens since 1999, but recently they have begun to use the programmes and, through training of the personnel, they now have a significantly more comfortable and calm working environment than before, thanks to RATIONAL.
