It’s been nearly 30 years since Scores burst onto the scene, serving delicious rotisserie chicken and ribs. Since then, they’ve opened.
40 locations throughout Quebec and Ontario. They had found their stride, and the future was looking bright. And then, COVID entered the scene. The pandemic was a shock to the system, shuttering businesses around the globe. But for franchise owners like Kosta Ziss, it was also an opportunity to re-evaluate operations and see what could be improved, starting with the way they prepared their signature dish.
“In the past, we used to pre-cook our chickens on spits, five at a time,“ says Ziss. Those chickens were then reheated prior to serving in a laborious process that took 2.5 hours to complete. “With the RATIONAL, we managed to reduce that to 40 minutes,“ says Ziss, “which blows my mind.“
