For Executive Chef Ryan Lister, launching The Dorset was an opportunity to create an innovative dining experience that combines British classics with seasonal Canadian ingredients. Located in downtown Toronto, The Dorset’s menu emphasizes quality seafood, game meats, and pub-inspired comfort foods, all executed with the help of two RATIONAL iCombi Pro units. “I knew I definitely wanted a RATIONAL,“ Chef Ryan notes, crediting the iCombi Pro as essential to his high-energy kitchen where consistency is non-negotiable.
For Chef Lister, the iCombi Pro’s steam function has been a game-changer, allowing his team to steam large batches, like 145 eggs in 30 minutes, with remarkable precision. This feature, he says, enables them to be precise with temperature and reduces handling, which is crucial for maintaining the integrity of delicate meats. “What I really love about the steam function of the RATIONAL is you can be really precise with the temperature,“ he explains, adding that this reduces time spent adjusting and monitoring, freeing up staff to focus on other tasks.
