The George & Dragon at Graveley in Hertfordshire is a newly refurbished family pub and restaurant. Owner Jason Kingsbury and head chef Sam Robinson serve a fine selection of traditional dishes. They describe their menu as ‘fresh, simple and seasonal.’ All their food is cooked fresh on the premises and they strive to source their ingredients locally. It’s a recipe for success, in just eight months they have seen food sales go up to around 600 meals a week, despite having a small kitchen.
Sam says that a key part of the kitchen brigade is their RATIONAL SelfCookingCenter® combi oven. Kitchen service needs to be fast, because the pub is becoming so popular, whether it’s for Sunday roast or home-made chicken burgers. “We’re big on fish too; we know the boat and the skipper where the fish comes from and it goes from catch to table in under 12 hours,” says Sam. The pub has 68 covers indoors, and 52 outdoors.

The RATIONAL at the George & Dragon is a six grid electric model. “It’s ideal in a small kitchen because of the workload it can handle. It boosts our production, giving us a faster timescale to prepare and present food.” Sam continues, “one of our signature dishes is corn-fed chicken with roasted vegetables and herbs in a smoked Cheddar sauce. It’s flying off the menu! The RATIONAL SelfCookingCenter® does everything we want – it can roast, poach, bake, toast, braise... it can even panfry fish and cook chips.
All at the touch of a button and all with consistent quality. We use it for bulk cooking and at least 60% of our food goes through it. For Sunday roast meals it’s probably more like 99%”, Jason adds. “The RATIONAL team gives great after-sales support and offer a two-year warranty.
