Tudor Hall, a family owned and operated banquet hall in Ottawa, Canada likes to do things the traditional way: dinner buffets with carving stations served by attentive staff; beautiful tablescapes with candles, linens and china; and food made the old-fashioned way.
Established in 1975 by the Giammaria family, Tudor Hall hosts weddings, social gatherings, corporate events, celebrations like Mother’s Day and New Year’s Eve, and all kinds of banqueted events. Its handsomely appointed ballrooms hold anywhere from 50 to 1,000 people, with the average event hosting 400 to 500 guests.
Today, Tudor Hall is managed by Gabriel Giammaria, the son of the founder and the one who convinced his father to buy a RATIONAL combi oven back in 2004. His father had resisted moving away from the way they were used to cooking, but eventually agreed to try a RATIONAL CombiMaster® Plus. As soon as he saw how many additional servings a roast would yield after cooking in the RATIONAL, the elder Giammaria was convinced. He couldn’t believe that simply changing the cooking process could eliminate so much food waste.
“My roasts used to come out of the convection oven weighing 19 pounds. Now that I’m cooking them in the RATIONAL, they weigh 22 pounds. Two or three extra pounds per roast makes a huge impact on my food costs and paid for our unit very quickly,“ Giammaria said.
They later added a second RATIONAL, a SelfCookingCenter® 202.
“The volume of food we can produce in our SelfCookingCenter® is incredible,“ Giammaria said. “We love how all the features come standard on a RATIONAL. No need for upgrades to get all the bells and whistles.“
Now they can prepare up to nine roasts overnight. “Having RATIONAL in our kitchen has made plating much less stressful,“ he said.
