Everything in his kitchen revolves around his two RATIONAL Combis. One unit handles Finishing®, and is primarily used to produce side dishes, vegetables, pasta, rice, etc. The second unit is programmed for Güggeli. “The chicken comes out far better in the RATIONAL unit than in the chicken grill,” Schäublin explains.
“I couldn’t believe that at first, but it’s true, and it also goes much faster.” Thomas Schäublin has been cooking with RATIONAL for nearly 20 years now, and the technology has fascinated him since the beginning. He’s recently started doing breaded products in the SelfCookingCenter® as well, primarily cordon bleu, and his guests are delighted. As Schäublin puts it: “The main advantages this technology offers me are the variety of usage options and the speed. Not to mention the automatic cleaning feature, because that’s sensational. In the evenings I always tell my kitchen assistants that they don't have to clean the inside of the oven, because I’ll do that myself. And they say, ‘Thanks a lot, boss!’”
