Many establishments still do all of this manually, using pens and paper or Excel sheets.
Hygiene Management Pro was developed to automate and simplify kitchen, hygiene, and quality processes as a day-to-day safety solution for the hospitality industry.

Hygiene Management Pro is a professional software solution for hygiene and quality management; it is a paid expansion of the hygiene management system already available on the ConnectedCooking platform.

Hygiene Management Pro supports numerous processes throughout the food journey. Among other things, the software is used in quality assurance in incoming goods inspection, refrigeration equipment monitoring, food production, food service, and cleaning.

ConnectedCooking enables free digital access to RATIONAL cooking systems and services. This also includes the Hygiene Management module, which records temperature curves measured in RATIONAL cooking systems. Hygiene Management Pro is based on ConnectedCooking, but offers an extended range of functions with corresponding measurement technology. RATIONAL also provides consulting and training services, assists customers in determining their needs, helps with system set-up, and offers interactive training courses to facilitate the company's digital conversion.

Many kitchen software providers only offer individual solutions. Hygiene Management Pro, on the other hand, is a comprehensive solution consisting of software, measurement technology, and services. The solution networks different service and hospitality areas and can even integrate equipment by select third-party manufacturers. RATIONAL is also a global market and technology leader; in addition to having almost 50 years of experience in the field of professional food preparation, it has over 20 years of experience with digital solutions. Hygiene Management Pro is sold as an SaaS (Software as a Service) model; it is not available for local (on-premises) installation.

SaaS stands for “Software as a Service." It describes a sales model in which software is provided online through the cloud and accessed via a web browser. As such, it does not have to be installed locally. The provider assumes responsibility for software maintenance and upkeep. Hygiene Management Pro is thus used as a service over the Internet. The user pays a monthly fee to use the software. "On-premises" describes a software licensing model as well. Unlike with the SaaS model, on-premises users acquire the software once and operate it on their own hardware under their own responsibility.

Software as a Service solutions provide better flexibility, security and performance.

The software always remains up-to-date, so it provides optimum support of business processes. There is no need to set up IT infrastructure and install the software locally. This eliminates the significant expense of acquiring and operating your own computers, not to mention hardware and software maintenance and upkeep costs.

Technical requirements.

No, you do not need to download software on your computers. Hygiene Management Pro is cloud software; you use directly in your web browser. Apple and Android devices can download the Hygiene Management Pro app from the corresponding app stores.

You will need a LAN/WLAN connection or mobile Internet with at least 16,000 kbit/s download and 1,024 kbit/s upload speeds, along with an Internet browser (Chrome 87 or higher, Microsoft Edge 87 or higher, Safari 14 or higher).

Hygiene Management Pro can be used on numerous devices, such as smartphones, tablets, laptops and desktop PCs. The mobile application is available for Android and iOS devices.

Data protection and data security.

Data protection is a high priority for RATIONAL. All data is protected in accordance with the GDPR and every employee is regularly trained on the topic. Moreover, a state-of-the-art data security concept offers the highest possible degree of data protection.

All connections and communication are TLS encrypted. All data is stored redundantly and thus protected against data loss. Data centers are secured physically and virtually. Hygiene Management Pro is automatically secured on a daily basis.

The data is stored and processed in an ISO 27001-certified data center in Frankfurt am Main, Germany.

The data is provided in CSV file format.

Your login will remain active even upon cancellation, though you will only be able to view your data after that. After notifying you, we will deactivate your login and delete all data.

Software.

Yes, you can set the user interface to different languages. You also have the option of translating checklists into any language.

The web application is only available online. After being opened in the mobile app, checklists can be edited offline. The data will be synced once the Internet connection is re-established. If a sensor goes offline, it will store its temperature data for 10 days. That temperature data will be synced automatically when the Internet connection is re-established.

Hygiene Management Pro offers integration options for selected merchandise management systems.

In principle, third-party devices can be integrated if they meet the basic technical requirements. As such, it is advisable to check these basic requirements when planning new kitchens. For existing equipment, such checks can be carried out retroactively. RATIONAL digitization specialists are available to answer any questions you may have.

HACCP temperature data for RATIONAL cooking systems is stored for 6 months; all other data is stored for 5 years.

Checklist reports are stored for 5 years. This data storage period is based on Regulation EC No 178/2002 in conjunction with the Implementing Regulation of 15 October 2018.

The collected data is deleted after five years. This data can also be exported and transferred if desired.

No, your storage capacity will be expanded as needed. The system automatically expands resources if needed.

Yes, checklists can be created and edited on the computer using the web application. Checkpoints can be changed, added or deleted. Checklists are only filled in using the mobile app. This provides additional tampering protection by preventing unauthorized persons from accessing the lists.

Checklists can only be deleted using the administration section of the web application. Any data already captured using checklists is retained.

It is not possible to delete checklists from the system using the mobile app. However, you have the option of adding individual comments to the checklists. This ensures seamless documentation and increased auditing security.

Measurement and networking technology.

The sensors are equipped with the latest LoRaWAN radio technology. They operate at a radio frequency of 868 MHz, providing ideal conditions for wireless data transmission over long distances and inside buildings.

LoRaWAN stands for "Long Range Wide Area Network."

LoRaWAN is a radio technology that enables low-radiation, energy-efficient transmission of data over long distances. The technology was developed especially for the Internet of Things (IOT).

Yes, it is waterproof and has an IP65 rating.

Yes, the sensors are water-resistant - they have an IP67 rating.

LoRaWAN modules can reach a range of 2 km in open areas. These are laboratory-measured values; the actual range depends on the building structure and other sources of interference such as solid walls or metal environments. Make sure to have a RATIONAL digitization specialist provide on-site consultation and check the actual range.

Opening the sensor housing would mean the high protection standard (IP67) could no longer be guaranteed, so the housing must remain tightly sealed. However, their long battery life (up to 10 years) makes battery replacement unnecessary.

The sensors can withstand temperatures of up to 85°C for short periods, but continuous-use temperatures should not exceed 70°C.
In terms of negative temperatures, the sensor can be operated at temperatures as low as -40°C. Extreme temperatures, both positive and negative, affect battery life. As such, we advise maintaining an operating temperature range of -25°C to + 45°C.

In Europe, the sensors are set to a frequency of 868 MHz.
