If you drive along the North Shore of Oahu, you’ll come across the lovely town of Lāʻie, home to the Polynesian Cultural Center, a 42-acre nonprofit organization that showcases the diverse cultures of Polynesia. Visitors can walk through its six Pacific Island villages representing Hawaii, Fiji, New Zealand, Samoa, Tahiti, and Tonga, discovering the culture of each through music, dance, activities, and experiences. There are restaurants and outdoor spaces where guests gather for Polynesian luaus and buffets overflowing with traditional flavors and local ingredients, accompanied by live entertainment.
Feeding 1,500 hungry guests every day is no easy feat, but having the powerful, versatile RATIONAL iCombi Pro and iVario Pro XL in the kitchen helps to ensure there’s plenty of delicious, authentic cuisine for everyone. And to Polynesian Cultural Center Executive Chef Felix Tai, it’s about much more than simply preparing food. “As we know, food is love, but a lot of it is an aspect of culture. And this being the cultural center, I infuse a lot of that culture, the traditions of our ancestors, and this integrates as love,“ he says.
